About Sweetree Honey

Sweetree Honey is a homegrown family beekeeping business owned by Stephanie & Martin Lynch. We are passionate about natural healthy food that is made or grown locally. As artisan producers of bee products, we are involved in every aspect of our honey business. From bee husbandry, to harvesting, processing, packing and point of sale. Every effort is made to maintain the natural properties of our products. One of the things Martin learned as a hobbyist beekeeper is that you can deliver sensational honey from a small number of hives. It’s all about the nearby floral sources and how you process that honey. Much like a great wine reflects the terroir of where the grapes have grown, Sweetree Honey’s different varieties reflect the area and season the bees worked their magic. Unblended honeys are not new, but the fact that Sweetree’s honeys are not based on a single flower source but the local area and season make our approach unique. People who try Sweetree honey often comment on how it tastes like the honey they used to have when they were young. For this reason we choose our sites carefully and we never mix honey from different locations. Each apiary location has its own special nuance and character and this is reflected in the honey when you come to taste it. We enjoy offering customers the ‘taste’ of a location. Customers often comment they love that our honey can bring back memories of a special place to them whether it’s Hamilton Gardens, Hamilton Zoo, Four Brothers Reserve or The Hakarimata Ranges. Children also love they can eat a honey from somewhere they connect to. We call our honey 'raw honey' because during processing it is not subjected to high temperatures, which would destroy its natural enzymes and antibacterial qualities. Ultra-fine filtering is not used, ensuring pollen remains in the honey. To ensure the honey does not crystallize over time (become sugary) and a consistent texture is maintained, we finely granulate our honey. All Sweetree's honey is packaged in glass jars, our propolis in glass bottles and we offer bee pollen in glass jars. We believe storing food in glass, as opposed to plastic, is much healthier for the end consumer and also allows them to reuse or recycle the packaging after the honey has been eaten, rather than adding to the growing plastic stockpiles. But it goes further than just the end product. We want the honey and our environment to be healthy all the way through the process, so we ensure the honey is not stored is not stored in plastic the whole way through the process. We have continued to use the traditional wooden frames and beeswax comb foundation wired into the frame, as opposed to plastic. This is not only healthier for us humans and the bees but also for the environment. When harvesting our honey we always make sure we leave plenty of food stores on the hives for the bees to keep them healthy over the winter and to avoid feeding sugar syrup to
